Salt Beef and Beans

Ingredients
- Corned Beef1 lb
- 1/2 cup Kidney Beans1
- Scotch Bonnet1
- Scallions2
- Thyme1/4 tsp
- clove finely chopped Garlic1
- Water2 cups
- Coconut Milk3 Cups
- Bay Leaf2
- Allspice6
- Garlic2 cloves
Steps
Cook
- 🥄Cover the diced salt beef with water and bring to a boil.
Prepare
- 🔥Repeat as necessary, draining and replacing water to eliminate some of the brine.
Steps
- 🧂In a separate pan, place beans in water, add coconut milk, bay leaves, pimento seeds, whole garlic, whole scotch bonnet pepper and scallions.
Cook
- 🍳Slowly bring to a boil and simmer for about 2 hours, or until beans are tender.
- Add salt beef, onions, thyme and crushed garlic and simmer for another 20 minutes.
Prepare
- Adjust seasonings if necessary.
Steps
- 🍽️Remove the bay leaves and scotch bonnet pepper, being careful not to burst the pepper.
Serve
- 🌿Serve with white rice and your choice of salad or vegetables.
