Acaraje black-eyed pea fritters with shrimp filling

Ingredients

  • Black Eyed Peas800g
  • Garlic1 clove
  • Green Chilli1
  • small finely diced Red Onions1
  • Plain Flour2 tablespoons
  • Salt1 tsp
  • Chilli Powder1 tsp
  • Baking Powder1 tsp
  • Vegetable OilFor frying
  • sliced Red Onions1
  • tablespoon chopped Ginger1
  • Garlic2 cloves
  • chopped Red Chilli1
  • Raw tiger prawns150g
  • Vegetable Oil1 tablespoon
  • Plum Tomatoes2
  • tablespoon chopped Coriander1
  • LimeJuice of 1

Steps

Prepare

  2. 🔥Make the filling by placing the onion, ginger, garlic, chilli, and some salt into food processor.

Steps

  1. 🔥Purée until smooth.

Cook

  1. 🧂Heat the oil in a frying pan and pour the purée into it.
  2. 🍳Fry for 5 mins or until cooked through.

Prepare

  1. 🍳Add the prawns, tomatoes and chopped coriander.

  1. 🫇Squeeze in the lime and add salt to taste.

Cook

  1. 🍽️Cook for 3 mins, or until the prawns have cooked through.

  3. 🥄Drain and rinse the black-eyed peas.
  4. 🔥Pour into a food processor with the garlic and chili.
  5. 🧂Purée until smooth.
  6. 🍳Scrape into a bowl and add the onion, flour, salt, chilli powder and baking powder.

  1. Mix and roll into 16 balls.

  2. 🔥Heat the oven to 190C/170C fan/gas
  3. 🧂Heat 8cm of the palm or vegetable oil in a wok or small heavy pan.
  4. 🍳When a small piece of bread sizzles, drop 4-5 balls into the oil.

  1. 🔥Fry until golden and crisp, about 4-5 mins.

  1. 🧂Drain on kitchen paper and repeat until they are all finished.
  2. 🍳You can keep them warm in the oven while you finish.

Prepare

  1. 🍳Slice the fritters open down the centre and spoon the prawn filling in.

Serve

  1. 🫇Serve with hot sauce.
