Fish Soup (Ukha)

Ingredients

  • Olive Oil2 tbs
  • sliced Onion1
  • medium Carrots2
  • Fish Stock3 cups
  • Water3 cups
  • large Potatoes4
  • Bay Leaf3
  • Cod1
  • Salmon1

Steps

Prepare

  1. 🥄In a medium pot, heat the olive oil over medium-high heat.

Cook

  1. 🔥Add the onions and cook, stirring occasionally until the onions start to caramelize.
  2. 🧂Add the carrots and cook until the carrots start to soften, about 4 more minutes.

Steps

  1. 🧂Add the stock, water, potatoes, bay leaves, and black peppercorns.

Prepare

  1. 🍳Season with salt and bring to a boil.

Cook

  1. 🫇Reduce heat, cover and cook for 10 minutes.
  2. 🍽️Add the millet and cook for 15 more minutes until millet and potatoes are cooked.

  1. 🍽️Gently add the fish cubes.

Cook

  1. 🌿Stir and bring the soup to a simmer.
  2. The fish will cook through very fast, so make sure to not overcook them.

Steps

  1. They are done when the flesh is opaque and flakes easily.

Prepare

  1. 🥄Garnish the soup with chopped fresh dill or parsley before serving.
