Layered mango custard

Ingredients

  • ½ tbsp Custard1
  • Whipping Cream3 Cups
  • Milk3 Cups
  • Sugar1/3 cup
  • Water6 tablespoons
  • ½ tbsp Vanilla Extract1
  • MintGarnish
  • MangoGarnish
  • MangoTopping
  • Water5 tablespoons
  • SugarTo taste

Steps

Prepare

  1. 🥄For the pudding custard
  2. 🔥Combine water and gelatin in a bowl

  1. 🔥Let it rest for about 7-10 minutes

Prepare

  1. 🧂Combine cream, milk and sugar and heat for a few minutes until all the sugar melts.

Cook

  1. 🍳Do not boil.

Steps

  1. 🫇Take it off the stovetop and let it rest for about 5 minutes

  1. 🍽️Add gelatin mixture and stir.

  1. 🌿Add vanilla essence.

  1. Pour mixture into small glasses at an angle.

  1. 🥄It's really rich so the smaller glasses will help reduce the serving.
  2. 🔥Transfer to refrigerator to chill for a minimum of 4 hours.
  3. 🧂( I kept mine in the refrigerator overnight) Please don't put it in the freezer.
  4. 🍳For the mango puree

Prepare

  1. 🔥When you're ready to add the mango purée to the top of the pudding, you can then start the process of preparing the puree
  2. 🧂Using a blender or hand help mixer, purée mango chunks/slices

Steps

  1. 🧂Strain purée for a finer consistency
  2. 🍳You can use puree as is or you can add some sugar for a little more sweetness
  3. 🫇To make the puree like pudding
  4. 🍽️Add sugar to puree
  5. 🌿Transfer to a stove top and stir until sugar is dissolved.
  6. Remove from stovetop

Prepare

  1. 🍳Add gelatin mixture and stir consistently
  2. 🫇Remove chilled creamy custard from refrigerator and add mango puree mixture to the top of it

Steps

  1. 🫇Chill for a minimum of 2 hours (longer is better)

Serve

  1. 🍽️Garnish with mint and small mango pieces and serve
