Belgian Waterzooi Chicken

Ingredientes

  • Chicken Legs1
  • Chicken Breast1
  • Water3 Cups
  • small Carrots1
  • Leek2
  • Celery1
  • Potatoes100g
  • Garlic2 cloves
  • Sprig Rosemary1
  • 1/2 cups Cream1
  • Bay Leaf2
  • Unsalted Butter1 tablespoon
  • Egg Yolks1
  • PepperPinch
  • SaltPinch

Preparar

  1. 🥄Put the chicken, water and one garlic clove in a large saucepan.

Cocinar

  1. 🔥Place it over medium-high heat until boiling.
  2. 🧂Then turn the heat low, cover the pan and simmer the chicken for 10 minutes.

  1. 🧂Remove the chicken leg and breast.
  2. 🍳Keep the fresh chicken stock for later.
  3. 🫇Let the chicken cool.
  4. 🍽️Then dice the chicken breast up.
  5. 🌿Pick the meat off the leg.
  6. Discard any bones and skin.

  1. 🍳Slice the leek, celery and carrot finely (julienne).

  1. 🫇Add the butter, rosemary and bay leaves to a large pan and place it over medium heat until melted.

  1. 🍽️Then add the sliced vegetables.
  2. 🌿Season with pepper and salt.

  1. 🌿Stir and cook the vegetables for 3 minutes.

  1. Then add the shredded and diced chicken.

  1. 🧂Cover the pan and cook the stew for 20 minutes until the potatoes are tender.
