Chorba Hamra bel Frik (Algerian Lamb, Tomato, and Freekeh Soup)

Ingredientes

  • Freekeh1 cup
  • ounces Lamb12
  • finely chopped Onion1
  • Black Pepper1 tsp
  • Paprika1 tsp
  • Ground Cinnamon1 tsp
  • SaltTo taste
  • Vegetable Oil3 tablespoons
  • bunch Cilantro1
  • bunch Mint1
  • Celery1
  • oz jar Chickpeas14
  • Water4 cups
  • Diced Zucchini1
  • Diced Carrots1
  • Tomato Puree1 tablespoon
  • Medium Tomato3
  • Diced Potatoes1

Pasos

Preparar

  1. 🥄Place freekeh in a small bowl and cover with cold water.
  2. 🔥Set aside.
  3. 🧂Combine lamb, onion, black pepper, paprika, cinnamon, and salt in a pot.
  4. 🍳Stir in oil, 1/2 the cilantro, 1/2 the mint, and celery stalk until combined.

  1. 🔥Simmer over low heat for 15 minutes.
  2. 🧂Stir in chickpeas; pour in just enough water to cover, and return to a simmer.

  1. 🧂Stir in zucchini, carrot, and tomato paste.

  1. 🍳Set a steamer over the pot; add tomatoes.
  2. 🫇Cover and steam tomatoes until soft, about 5 minutes.

  1. 🫇Crush tomatoes using a wooden spoon, so pulp drips into soup.

  1. 🍽️Remove the steamer and discard leftover tomato peels.
