Corned Beef Hash

Ingredients

  • Unsalted Butter3 tablespoons
  • medium chopped Onion1
  • Corned Beef3 Cups
  • chopped Potatoes3
  • Kosher SaltDash
  • Black PepperDash
  • Freshly Chopped ParsleyChopped

Steps

Prepare

  1. 🥄Sauté the onions:
  2. 🔥Heat butter in a large skillet (preferably cast iron) on medium heat.

Cook

  1. 🔥Add the onion and cook a few minutes, until translucent.

  1. 🧂Add the potatoes and corned beef:

  1. 🍳Mix in the chopped corned beef and potatoes.

  1. 🫇Spread out evenly over the pan.

  1. 🍽️Increase the heat to high or medium high and press down on the mixture with a metal spatula.

Cook

  1. 🌿Cook until browned and then flip:

  1. Do not stir the potatoes and corned beef, but let them brown.
  2. 🥄If you hear them sizzling, this is good.
  3. 🔥Use a metal spatula to peek underneath and see if they are browning.
  4. 🧂If nicely browned, use the spatula to flip sections over in the pan so that they brown on the other side.
  5. 🍳Press down again with the spatula.
  6. 🫇If there is too much sticking, you can add a little more butter to the pan.

Cook

  1. 🥄Continue to cook in this manner until the potatoes and the corned beef are nicely browned.

Prepare

  1. 🔥Stir in the parsley and season:
  2. 🧂Remove from heat, stir in chopped parsley.

Steps

  1. 🧂Add plenty of freshly ground black pepper, and add salt to taste.
