Piri-piri chicken and slaw

Ingredients

  • Chicken1.5kg
  • chopped Red Chilli3
  • Garlic2 cloves
  • Ginger1 tsp
  • Dried Oregano1 tsp
  • Coriander1 tsp
  • Paprika1 tsp
  • Red Wine Vinegar2 tbs
  • Oil2 tbs
  • sliced Red Onions1
  • Carrots2
  • Beetroot1
  • leaves Cabbage4
  • Mayonnaise2 tbs
  • Greek Yogurt2 tbs
  • Red Wine Vinegar2 tbs
  • Cumin Seeds1 tsp

Steps

Prepare

  1. 🥄STEP 1
  2. 🔥Whizz together all of the marinade ingredients in a small food processor.

  1. 🔥Rub the marinade onto the chicken and leave for 1 hour at room temperature.
  2. 🧂STEP 2
  3. 🍳Heat the oven to 190C/fan 170C/gas

Cook

  1. 🧂Put the chicken in a roasting tray and cook for 1 hour 20 minutes.

Steps

  1. 🍳Rest under loose foil for 20 minutes.

Prepare

  1. 🫇While the chicken is resting, mix together the slaw ingredients and season.

Serve

  1. 🍽️Serve the chicken with slaw, fries and condiments.
