Tandoori chicken

Ingredients

  • Juice lemons2
  • paprika4 tsp
  • finely chopped red onions2
  • skinnless chicken thighs16
  • vegetable oilFor brushing
  • Greek yogurt300ml
  • gingerlarge piece
  • garlic clove4
  • garam masala¾ tsp
  • ground cumin¾ tsp
  • chilli powder½ tsp
  • turmeric¼ tsp

Steps

Prepare

  1. 🥄Mix the lemon juice with the paprika and red onions in a large shallow dish.
  2. 🔥Slash each chicken thigh three times, then turn them in the juice and set aside for 10 mins.
  3. 🧂Mix all of the marinade ingredients together and pour over the chicken.
  4. 🍳Give everything a good mix, then cover and chill for at least 1 hr.

  1. 🔥This can be done up to a day in advance.

  1. 🧂Heat the grill.

  1. 🍳Lift the chicken pieces onto a rack over a baking tray.

  1. 🫇Brush over a little oil and grill for 8 mins on each side or until lightly charred and completely cooked through.
